I bought the cable kit that comes with cable and new knobs.
It isn't exact but beat having broken knobs.

Yes and stock they will still be in the hole by some amount. I thought I had heard before most stock motors had the pistons .005"~.007" in the hole.
I would not select/order a head gasket without taking the measurement, but you could mic your old gasket to see what you had.
My 302 runs well with my set-up and has no pinging at all rpm ranges on pump gas.

 Yes I coated both sides at the intake ports with Permatex Aviation sealant, and used silicone only around the water jacket.

I would recommend having your machinist check your intake and retrue as required, heck I'd have him true it just because you don't want to find a leak after you've got it all back together. It looks like a vacuum leak to me. How did your plugs look? If you were having trouble with low vacuum at idle, and fouling plugs you found your culprit!
 Intake; I used the Felpro 1256 intake gasket it was the correct size for my 472 intake runners its grey and looks close to an original. I also used the Intake Manifold Gasket Alignment Tool posted over at Camaros.net.

Use Permatex Aviation Form-A-Gasket Sealant Liquid at your intake runners, it won't be effected by fuel or heat and will ensure a lasting seal.

 I used the .028 Mr. Gasket Part Number 1134 Ultra-Seal Head Gaskets as my pistons averaged .010" to the deck. QUENCH is best between .035" to .044".
How far in the hole are your pistons on average?

He discussed everything in detail needed to restore, as well as kept to the price he quoted upon receipt and teardown for estimate.

you need to bump it a little more counter-clockwise the distributor is a worm type gear and the shaft will rotate clockwise when dropping into place

Yes you can, but its tough to get the ring to grab the metal webbing while holding the center pleat tabs to it. If you use string to hold it, then ring it it's much easier. The ring needs to pierce the tab and grab the metal webbing, and if you're trying to push and hold the cover as well as make sure it will grab the metal webbing its pretty difficult.

Pretty sure they are the standard 3/4" anyways that what we used. That and Semco guns, I have seen them occasionally for $100.
The best trick is to get a long upholstery needle and a good hook needle. That along with heavy upholstery string (wax coated) allows you to sew the seam tabs welting to the seat base, then install hog rings with standard pliers (way too slow for an assembly line). The hog ring gun allows you to push the tab/welt into the spring pocket and pull the trigger whala!! You can't apply any pressure with pliers and hold that tab to the spring, so lace them up and save yourself some time.

Having done upholstery as a job a lifetime ago, hog ring guns make all the difference on seat ringing.
If you can find an old gun on epay, well it makes the job so much easier! Those hog ring pliers just don't cut it.
The more you use the better you definately don't want uneven seams caused by too little rings holding the seam tabs/welting.
And use silicone spray or plastic to slip the covers on as it makes the material layout evenly.

All the above and a reproduction smog pulley, insanely high for an original and the repos are not even close to the gage and stampings

I do remeber the gasket has little plastic spacers for each bolt location, and you have to start at the end and work the pan down.
My pan is a GM rplacement part with large end gaps. The little plastic sleeves prevent over compression and consistant gasket unformity.
Good gasket, I also used felpros reusable timing gasket hard metal base with silicone face works well.
