What was the color of the undercarriage (floor pans and tunnel)? My 69 has primer gray floor pans and the tunnel is sprayed black. I'm trying to understand what was done from the factory.

There should be some good pictures  of the bottom of floorpans on here. Mine was grey in the tunnel and black to the rockers. Some grey above the gas tank. The body colors on mine really showed up

Here's a thread on SYC on a COPO build. IMHO they perfectly re-created the floor pan finish.

I use PPG AUE LG black(low gloss)360, correct 30% gloss. It is in the commercial line. High solids so it required reduction to achieve the finish desired. Many don't know about it because not all PPG jobbers carry it. Excellent product line and less expensive than the automotive line. I don't use PPG DPLF since they dropped the old DP line.

Each car will be a little different. There are significant variations between LOS and NOR.

Pics and details are awesome in the link William posted.

I was involved with a couple of restos in the late '80s; we just painted them satin black. Lots of time and effort involved to correctly refinish a floor pan like that.

I saw Grady's COPO at MCACN. Awesome resto!

Mike does outstanding work.  I used sikkens rally black and it is in a sheen that I didnt have to flatten it. It sprays really nice too.  Its a little pricey tho

Couldn't agree more; that thread on Grady's COPO was inspiring to follow along with the progress.
