If I install a console with gauges on my 1969 Z28 what do I do with the idiot lights?

i would suggest you get the corresponding dash cluster with the tach and non "idiot lights" speedo. the fuel guage would be redundant if you don't change the dash cluster (which would make it very innaccurate). you would also need to find the proper under dash harness for a tach/console car with the proper trans type. unlike cars today, you cannot just plug a harness from the console into your original harness.

another option is to use an aftermarket guage pod for the console that you could mount aftermarket round guages in. i've seen them for sale on ebay.

now many people on this site will probably cringe when i suggest this option, but if you insist on keeping your orriginal dash cluster you could keep the idiot lights functional and get the oil pressure and temp guage to work by:
A) use a "T" fitting when you add the oil pressure line to the guage.
B) find a second location for temp sending unit, maybe other cylinder head.
C) disconnect one of the two gas guages, i would suggest the one in the console.
D) compare wiring diagrams to find out what wires to splice into.
E) disconnect the clock wires so it won't burn up before it is rebuilt.
