Yes, the switch is adjustable as it sets on top of the column.
Loosen the two screws securing it to the column, place in reverse, and adjust for light reflection on the garage door or back wall.
Repeat in/out of reverse to verify lights work and adjust accordingly.

No, OE design has the gray wire attached to INST spade on fuse panel, or tied into radio harness.
I would probably leave well enough alone as the gauges light up when the ign sw is in IGN or ACC.
Not a bad thing, my own personal preference as I wire the 'dash' lights with incoming ign power.

The OE sensor is 1/2 inch NPT (National Pipe Thread}, a tapered thread - tighten tighter to stop leaking.
Sensor is installed without too much pipe sealant as the sensor body needs to be grounded to the head for circuit continuity.
If you use an ohmmeter, measure the resistance from the center terminal to engine ground.
When cold, reads high resistance, above 1000 ohms.
As the sensor heats up, typical resistance value would be about 180-200 ohms for an approximate gauge reading of 180°F, the 10 o:clock mark.
Reads like the head is set for a 3/8" NPT.
You might be able to drill out the 3/8 hole for a 1/2 hole, I have never done it, yet. Be careful in tapping, you could make the threaded hole too big.

Yes, there is a difference in the sensors you have.
No, you should not 'adapt' to fit the sensor as the sensor tip needs to be in the coolant flow for a correct reading. If the sensor is out from the coolant flow, the gauge will not sense the coolant temp. It may sense cylinder head material temp, and would be a higher temp indicated.

On the picture shown, one terminal gets a fused ign or reverse power lead and the other terminal gets the light green wire to the b/up lights.
The bellcrank moves the silver tab on the right of the switch, via the turning tube of the column, and slides the internal switch connection over to complete the path for power.

Mr. Norton brings up a good point in using an auto trans as the power application is more forgiving than 'shocking' the driveline with a clutch, aka, 5000 rpm clutch dumps.
I had a 8.2 inch diff in a '67 and moved it over to a '68 when I was drag racing.
It lasted 9 years/seasons running a 350 CID/PG/4.11/ 2900 lbs at an et of 13.40's using 28X10.5X14 slicks and traction bars with the snubber under the front spring eyes.
Then the carrier split. I smiled as the diff didn't owe me anything, I got my money's worth.
Driving technique is the key.

I would try another known good battery, maybe one from a daily driver, before discounting the VR reg.
Ensure the ground strap from the mounting bolt of the mech VR is also in place with the new VR.
Might even try a separate ground strap from the new VR chassis to the alt case for an experiment.

Usually, throat is the term defining the working distance from the anvil to the main structure of a press.
Think of a C-clamp, it has a movable anvil and a stationary jaw/chuck supported by its structure, aka, backbone, lack of a better term.
The 'throat' is the distance from the anvil and chuck/jaw to the backbone.
Bigger C-clamp, bigger throat.

Agree with most answers given. The OE ammeter is a millivoltmeter measuring a voltage drop on a length of wire.
The OE ammeter is merely an indicator, no quantitative measurements, read calibrated, can be trusted.
A true ammeter measures the current draw to/from the battery.
A suggestion would be installing temporarly an ammeter with an internal shunt, a cheap -50-0-+50 ammeter from Harbor Freight, catch on sale for $10 or less, can be wired up to the two leads on the battery junction block. Hook up ammeter, turn on lights, gauge reads towards the charge side, reverse the leads.

With 25 amps indicated all the time, it may be a bad battery cell - swap a known good battery and compare results.
After a normal engine start, with OE designed circuitry, it would take about 15-20 miles of 2000-2500 rpm to recharge fully
Also, with 25 amps, it is getting close to the max output for a 37 amp alternator. I would imagine the alt case is hot to the touch.
Tip: with a 50 amp range of the HF ammeter, you could hook it up to the alt BATT stud and view the action.

Welcome to the Club and congrats on buying the correct year.
Reapinting back to the original color is worth a buck or two, as Corvette Bronze was very few and far between.
Verifying a '68 is kindda hard, but having documentation helps, and more important is the POP plate as it has 'born with' options listed.
Other here more pronounced, will help answer your questions better than I can as I am learning from the experts here.

One '68 327 I had, had the weight parallel to pass frame rail with counterweight to the front.
I would think the valve would be universal fit as it would match manifold ID.
A '64 Impala 327-300HP, ram horn manifold had the weight to the rear of manifold.
