Judging manual is one.  Is it perfect?  Idk as I haven’t read completely through it but from what I am heard it’s pretty good.  Also MacNeish books are also good reference material along with getting the AIM (Assembly Instruction Manual).  But to be 100% honest, this website and the search function will get you a ton of info and all you have to do is look for it and utilize the search function.

Good luck with the restoration and welcome aboard. Your mention of detailing might indicate one of several avenues your after from show winner (judging events) to just wanting a correct original looking restoration.
The info Darrell supplied is spot on including doing searches. Here is some other areas just to check out which I suggest as we are not sure to what detail your after.
Here on the CRG are several original cars with pictures of how they came from the factory.  Check some of these out at "Original Cars and Details"
A great example is my friends low mileage 69Z-  http://www.camaros.org/forum/index.php?topic=12083.0;all
Another area might be Team Camaro "Build Projects" like this excellent 69Z with lots of detail- https://www.camaros.net/threads/1969-camaro-rs-z-28-brooklyn-project.337897/
Another detailed build thread here that also has info that relates to 69- http://www.camaros.org/forum/index.php?topic=18398.0;all
Again good luck and enjoy the restoration ride.
